Pepas cookies


Ingledients:

* Butter 100g
* Sugar 100g
* 1 egg
* vanilla essence 1 small spoonful
* self-rising flour 200g
* quince jam (at your discretion)

Preparation:

Mix the butter with the sugar and vanilla essence, add egg and churn until you obtain a creamy texture.
Add flour and join together with a spoon or fork.
Over table (previously having spread flour over it) squash the dough with a rolling pin or your hand, up to 1 cm high.
Cut the cookies with a round cutter, or a glass, place them on a baking sheet.Fill them with quince jam previously melted.
cook for 10 minutes, cool down before serving.

Scons


Here's a recipe that I learnt during my primary school years.

Ingredients:

300 grs of self-rising flour, 100 grs of sugar, 100 grs of butter or margarine, 1 egg, milk (whatever you think necessary), a bit of vanilla essence.

Preparation:

First, mix the flour with the butter until it is sand-like, then add the sugar and mix. Make a hole in the middle of that mixture and add the egg, vanilla and milk (4 or 5 spoons). Knead the dough until you reach a point where it is neither too soft nor too bland. Spread it til it has 2 cm high. Cut in small circles. Place in the oven for 15 min aprox. or until they are light brown. Let it cool and serve.

Lemon smell

I made my first Frola pie! the best was the lemon smell as I grated the zest. Loved it. A piece of advice: When melting the quince beware not to do it with too much lemon, otherwise it will taste a bit sour. Just water and one or two drops of lemon, if any.

Frola Pie


Ingredients:

250g of self-rising flour - 130g of butter - 130g of sugar -1 egg, and 1 egg yolk - 1 Lemon (grated lemon zest) - Quince Jam (at your discretion).

Preparation:

Crumble the butter and combine with flour, sugar, egg and egg yolk and mix well. Knead the dough until smooth, and spread it into a tart-pan, leaving a remnant to form top strips.

Pour quince jam (previously melted with a few drops of lemon) and place strips on top (8) forming diamond shapes. Place the tart-pan into a pre-heated oven, and bake until dough is cooked (golden brown in colour).

Remove the pie from the oven and allow to cool for approximately 15 minutes before serving.
